Eco Eats: Green’s 100 Mile Salad

Green Fine Salad Co. has always tossed fresh, interesting, and healthy salads, but now, with the 100 Mile Salad, you can eat local too. All of the salad’s ingredients–Rocco’s Farm red leaf and butter lettuce, cucumber, white onion, heirloom tomatoes, Olathe Mountain corn, herb-rubbed croutons, Haystack Mountain feta, and Palisade Peach vinaigrette–are grown or produced within 100 miles of Denver. According to co-owner Laurie Nassif, this salad will remain on Green’s menu indefinitely, though the make-up will change to reflect what’s available seasonally.
