Last week we heard some exciting news: Bradford Heap, chef-owner of Colterra in Niwot, just signed a lease on a space at the west end of Boulder’s Pearl Street Mall. While the spot (formerly Tom’s Tavern) doesn’t yet have a name, Heap says the concept will be casual and more bistro-focused than Colterra’s award-winning cuisine. The opening is pegged for spring.

In the meantime, we consider this further proof that high-end restaurateurs continue to make their mark in the casual-dining sector–think Frank Bonanno (Mizuna, Luca d’Italia) and Osteria Marco, and Josh Wolkon (Vesta Dipping Grill) and Steuben’s.
