A week’s vacation in Mexico left me relaxed but weary of huevos rancheros and every other derivative of Mexican-style eggs. So upon returning to Denver, I made haste to Hot Cakes Diner for their dinner-plate-size pancakes. The fluffy goodies come in eight variations, from plain buttermilk or whole wheat-honey to chocolate-chip or fresh strawberry.

My favorites of the bunch, however, are the health-nuts: blueberry pancakes topped with granola, chopped walnuts, and more blueberries. There’s really nothing healthy about them, especially when doused in syrup, but these pancakes are always hearty and always delicious.
