Local Read: “Colorado’s Forks in the Road”

At 5280, we have a thing for road-trip restaurants, those wonderful, sometimes hidden eateries that you come upon while driving to and from wherever it is you’re going. We often think of these spots as destinations in themselves, and in most issues of the magazine, we call out a new favorite (check out the write-up on the Butcher’s Table in Salida from the October issue).

So imagine our delight when Colorado’s Forks in the Road, a statewide guide to 42 road-trip restaurants by Aspen chef Reginald Barbour, arrived in the mail. Barbour breaks down the state into three regions–Northern, Central, and Southern–and each blurb includes photos, a capsule review, contact information, driving directions, and popular activities in the area.

In thumbing through the book, we discovered that despite all our culinary adventures, we’ve only been to five of Barbour’s recommended spots, which means just one thing: We’ve got a lot of exploring to do.

Bonus: Don’t miss the recipe section at the back of the book–we’ve got our eyes on the sweet potato lasagna from the Pine Creek Cookhouse. –AMF
