Trends: Pork and The Berkshire

Scan menus around town (and around the nation), and it’s no surprise that pork–be it bacon, prosciutto, or pork belly–is hugely popular right now. And there’s one local restaurant that has taken this pork preoccupation to another level. The Berkshire, a year-old cozy spot in Stapleton named for a prized breed of heritage hog, specializes in “swine, wine, and a good time.” Owned by Andy Ganick, the Berkshire serves lunch, dinner, and brunch, and the menus list more than 20 dishes with pork. Favorites include the pancetta-wrapped jalapeño poppers and the King–an Elvis-inspired sandwich of peanut butter, caramelized banana, and crispy bacon on grilled Hawaiian bread.
