In addition to serving spectacular American cuisine (don’t miss the confit of fresh bacon with Parmesan broth and greens), Table 6 has taken up a worthy cause: Farmer Fizz, Champagne that is hand-crafted by the farmers who grow the grapes.

Owner-sommelier Aaron Forman explains that of the 11,000 Champagne houses in the Champagne region of France, only about 900 actually grow their own grapes. Seeing value in the artisan (versus factory-produced) Champagne, Table 6’s wine list now offers a small selection of these wines (one by the glass and four by the bottle).

Sip on Chartogne Taillet “Cuvée St. Anne” Merfy NV, and taste the nuances of smoke and pear–and know that this winery produces in a year what Veuve Clicquot Ponsardin produces in a day.
