Thus far, my favorite part of Denver Restaurant Week (during which a multicourse meal for two costs $52.80) has been Solera‘s divine white truffle mac-and-cheese.

The decadent dish comes with pan-roasted scallops, asparagus, and toasted almonds, but the creamy pasta never overpowers the delicate seafood. Instead, the tangle of cheese and noodles tastes incredibly–even deceptively–light.

Bonus: In case you haven’t heard, Restaurant Week has been extended through March 6 at many locations.
