On Monday Sushi Den unveiled new cocktail and wine lists, courtesy of the imagination and hard work of bar manager Eric Dutton and his staff. While the wine selections are impressively thorough, I was stoked to see that the cocktails aren’t the standard, cloyingly sweet drinks served at so many bars around town.

There’s the tart and bright Yuzu Sunset—a blend of Grey Goose Pear, St. Germain, soda, and the rare-in-America citrusy yuzu liqueur. The refreshing Summertime, the Den’s version of white sangría, combines Basa Sauvignon Blanc, Cointreau, St. Germain, berries, apples, and pears.

The real star of the menu, though, is the common, but oft-maligned margarita. Sushi Den drinkers in the know have long ordered the off-list drink, but now, Dutton and Co. have publicly unveiled it. Dubbed the DEMSEMM Margarita—an acronym of the bar staff’s names—the drink is a fine, summery mix of Corazon Reposado tequila, Cointreau, and fresh limes and oranges. And it just might be the city’s best margarita.
