There was a time when Aspen’s Ajax Tavern was the place to eat. And then, there was the time when Ajax lost its edge and fell into mediocrity. Now, thanks to a recent makeover and new talent in the kitchen, the tavern is back to serving crave-worthy bistro staples.

For proof, order the braised beef short rib sandwich. The fall-apart-tender meat is comfort food at its best, especially when coupled with a ciabatta roll, jammy roasted tomatoes, pickled red onion, aged cheddar, and horseradish cream (ask for this on the side, lest there be an overabundance). The crispy frites that come alongside aren’t Ajax’s legendary truffle-Parmesan variety, but they’re perfectly salty and potatoey.

Bonus: Pair the sandwich with the springy grilled asparagus salad (farm greens, charred asparagus, mushroom conserva, Midnight Moon chêvre, and tangy green goddess dressing) and you’ve got a meal for two.
