In my mind, three things create the perfect summer dining experience: super-fresh seasonal ingredients, a casual setting (who wants to change out of shorts if you don’t have to?), and an inviting patio.

Several Denver restaurants meet these criteria, including Potager, Fuel Cafe, and The Squeaky Bean. But, thanks to the newly launched summer menu, my current hot-weather favorite is Tables in Park Hill.

Don’t miss the heirloom tomato and summer peach salad, a refreshing medley of red tomatoes and fresh peaches with tangy bits of blue cheese, sharp arugula, and slivered onions. And, for the main course, the delicate basil-crusted halibut with tomato and watercress is light and perfectly suited to a hot night. Both dishes pair beautifully with a glass of light, bright Gruner Veltliner.
