Today, the market is flooded with artisanal takes on the Italian staple—and thank goodness for that. We rejoice in picks like Mangiamo Pronto’s prosciutto cotto—literally “cooked Italian ham”—pizza. But don’t expect disks of Canadian ham and chunks of pineapple on this pie. Instead, you’re rewarded with a cracker-thin crust topped with semisweet apricot marmellata, spicy capocollo, and a judicious sprinkling of fresh Parmesan. The crowning touch is an arugula salad that adds zest to bites that are already peppery, nutty, and sweet.
