Teatime at the Brown Palace Hotel just got sweeter, thanks to chef William Dexter’s innovative new bee project on the rooftop of the hotel. In April, Dexter teamed up with beekeeper Matt Kentner of Kentner Farms to introduce the Bee Royalty Initiative, an urban beekeeping venture designed to increase the number of honeybees, while simultaneously producing honey for the Brown Palace’s high tea. If all goes well, the honey may also be used in spa treatments and on the regular dining menu. Feasting on the sweet blossoms of linden trees that line Denver streets, as well as on bee-friendly flowers (planted at Civic Center Park by the Brown Palace), the colonies of nearly 100,000 bees produce pungent honey that tastes just slightly of fresh mint.
