Back in April, we reported on the rise of pie—and indicated that Keegan Gerhard and Lisa Bailey of D Bar Desserts were looking to open a pie shop. They’re still in the market, but it appears Frank Bonanno (Mizuna, Luca D’Italia, Osteria Marco, and Bones) will beat them to it. On Monday, he signed a contract with Larimer Associates to open Wednesday’s Pie in Larimer Square. Bonanno hopes to open the tiny shop, which will consist of a pie counter and a rail with bar stools, in early November. Each Wednesday, he’ll bake three varieties of pie—starting with apple, banana-cream, and a seasonal flavor—which can be purchased by the slice or whole. Bonanno is undecided on whether there will be an à la mode option (we’re pulling for yes), but he says there will definitely be ice-cold milk. At the moment, Bonanno is sourcing local milk sold in glass bottles. Wednesdays, 11 a.m. to 6 p.m. (or until sell out), 1422 Larimer St.
