These days, anyone getting into the salad business is coming to it late. In the Denver area, the options are already varied with Green Fine Salad Co., Cava Greens, Fourleaf Chopped Salads, and at least a half-dozen Mad Greens. And yet, Choppers Custom Salads, a relative newcomer, proves there’s still room in this market.

Per usual, you craft your own salad or select from the posted menu. (I’m a fan of the Samurai— with romaine, Moroccan chicken, red peppers, red onions, snow peas, broccoli, and roasted peanuts—and the Goodness—with spring mix, pears, feta, sun-dried tomatoes, and sunflower seeds.)

What I like best about this four-month-old shop is the quality of the ingredients. Everything, from the cubed cucumbers to the sliced apples appear freshly cut and tended to.

I like the, price too: At $5.50, a small, custom order salad is on the lower end of the market.
