But it’s not just the space that impresses: Executive chef Simon Purvis boasts a 20-year track record of success at Four Seasons hotels around the world. From Vancouver, British Columbia, to Singapore, he has become known for crafting iconic dishes for each location.

To capture the essence of Denver, EDGE will be a “progressive American steak house” that serves custom, dry-aged, local beef. Diners will taste the quality in Purvis’ hickory-smoked signature steaks (such as a mouthwatering 22-ounce porterhouse), as well as in entrées and appetizers featuring wild game and with an emphasis on local produce. Also look for modern twists in dishes such as Kobe beef with truffle ponzu cooked tableside on hot rocks and Purvis’ version of Rocky Mountain sushi made with variations of wild game and fresh fish.
