In preparation for Domaine de Canton’s annual “Bartender of the Year” competition, Encore on Colfax’s bar manager Adam Dunbar dug deep into his liquor cabinet and came up with the “Allied Roots.” With notes of floral gin, ginger, root beer, and citrus, Dunbar’s cocktail rocketed him to the regional semifinals—where he competed against fellow Front Range mixologists Noah Heaney of Happy’s Bitter Bar and John Manwaring from Root Down. Dunbar didn’t advance to the finals, but winning isn’t everything—and we think Dunbar’s drink ought to become your new summer staple. “It’s perfect for patio weather,” Dunbar says. “It’s crisp and refreshing—perfect for a hot day under the sun.” Drink up at Encore, or mix it at home.

Allied Roots

  • 2 ounces G’Vine Floraison Gin
  • 1 ounce Domaine de Canton
  • ¼ ounce orange juice
  • ¼ ounce Root Organic Liqueur
  • 2 dashes Regans’ Orange Bitters No. 6

Shake with ice and serve up with an orange twist.
