Rosh Hashanah, the Jewish New Year, starts tonight, and its arrival has filled my head with thoughts of homemade chicken soup, brisket, and apple cake. Hey, food’s a big part of being Jewish—take a read. However, since living on my own, I tend to overlook the traditional dipping of apples in honey (you eat sweet food in the hopes of a sweet year ahead, get it?)—that is, until I discovered that Colorado’s bounty includes apples.

You can go pick your own at a number of farms around the state, or—since this is short notice—simply head to Whole Foods Market, Marczyk Fine Foods, or Spinelli’s Market and take your pick of Jonagolds, Galas, and more.

Sweeten the deal with Colorado-produced honey. I recommend Beeyond the Hive (find it at In Season Local Market) or Simply Honey (get it at the Truffle Cheese Shop).
