A few months ago, Wild Eggs, a breakfast mini-chain founded by the J.D. Rothberg family in Louisville, Kentucky, came to Denver (where the family traces its deepest American roots).

Set across the street from the ever-popular Lucile’s in West Washington Park, Wild Eggs holds its own with the early morning crowd, thanks to innovative takes on old breakfast classics.

Don’t miss the Kalamity Katie’s Border Benedict (pictured) with two poached eggs topped with queso fundido, pico de gallo, green onions, avocado, and sour cream perched on mildly spicy chorizo and two chili-cheddar corn cakes. (Pair the feast with the Proud Mary, a spicy cocktail made with Absolute pepper vodka, Zing Zang mix, and a skewer of Habargerdill pickles, green olives, and pepperoncini).

Or, satisfy your sweet tooth with the decadent Sweet Home apple bourbon crepes made with Elijah Craig apple-bourbon compote, candied pecans, vanilla bourbon sorghum, a cloud of sweetened whipped cream, and a sprinkle of cinnamon.
