Longmont Eats: Comida Cantina

Rayme Rossello has proven herself to be a shrewd businesswoman. Years ago, she made a name for herself by co-starting the ever-popular Proto’s Pizzeria Napoletana. She left that behind, but when the food truck trend took hold, she rolled out Comida—her answer to mobile Mexican street food. Most recently, she launched Comida Cantina, a brick-and-mortar in Longmont that expands on the street food theme. Plied with a full bar, the menu offers a well-honed menu of innovative antojitos, tacos, tostadas, gorditas, tortas, quesadillas, and desserts.

Expect full-bodied salsas, puckery pickled vegetables, and succulent slow-roasted meats. Don’t miss the griddled pork carnitas tacos (pictured) in soft house-made corn tortillas with cotija, smoked gouda, and asadero; or the Sirloin Situation tacos with sirloin slow cooked in Negro Modelo, smoked gouda-sweet potato mash with roasted onions, and house crema. Top it off with a refreshing agua de Jamaica margarita (a potent cocktail turned magenta with hibiscus juice).

More to Love: Cantina is expanding its hours: Starting on April 4, it’ll open for lunch at 11:30 a.m. And beginning on April 7, weekend brunch will begin at 9 a.m.
