Chef Troy Guard (TAG, TAG Raw Bar, Madison Street) is at it again—he’s cooking up another restaurant. Actually two. He’s partnered with the H BurgerCo. crew and while they’re still thinking up a name, they’ve inked the concept (“hip-ghetto taquería with more than just tacos”) and have two locations (one on Walnut Street in Boulder and one pending in downtown Denver).

Guard will cover the taquería staples (steak, chicken, pork tacos) but his main focus will be the “TAG-style stuff like duck tongue, lamb belly, cockscomb, cow brain.” He’s also planning on a taco of the week, a tamale of the week, a couple fresh salads, ceviche, and “TAG-style salsa.”

With affordable prices ($2 to $4 tacos and $5 to $8 cocktails), Guard hopes to see diners a couple times a week. Sounds downright Pinche Taquería to me, but given how much I love that spot, there’s plenty of room for more. (See Comida Cantina and the soon-to-open 3 Monkeys Cantina.)
