On Monday, May 28, Snooze‘s Boulder location will tap a keg—and it won’t be just any keg. It’ll be Snooze Booze (that’s the working title), a made-for-Snooze sparkling wine from Infinite Monkey Theorem.

Jon Schlegel, co-owner of the eatery, has been working on the wine with IMT’s Ben Parsons since last summer. The final product, which is made of Albariño grapes, will find its way into the restaurant’s mimosas and cocktails, such as the melon baller with fresh-squeezed watermelon juice, elderflower liqueur, and sparking wine.

It’s fun to have a proprietary sparkling on tap, but one of the primary reasons behind the bubbly is sustainability. Each of the seven Snooze locations goes through 10 to 12 cases of sparkling wine in a week’s time. That’s a lot of unnecessary waste. The IMT kegs holds about 25 bottles worth of juice—and they’re refilled at the winery a couple miles away.

Schlegel is testing Snooze Booze at the Boulder store because the location already has a tap system in place. If all goes well, the bubbles will eventually be on tap at all locations. (Tip: The Boulder crew tapped a keg this morning in order to work out the kinks before the big launch).
