The opening of H BurgerCo on East Pearl Street means just one thing: The high-end burger trend has officially hit Boulder. Long-standing eateries such as the West End Tavern have served terrific hamburgers for years, but the opening of Larkburger in 2009 and Reuben’s Burger Bistro in 2010 kicked off Boulder’s burger revolution.

H BurgerCo, the most recent newcomer to the Boulder scene, fired up its griddles on May 17 in the revamped Pinyon location. An offshoot of the LoDo shop and Little H Burger on Colorado Boulevard, Boulder’s version doesn’t stray far from the original, but the fledgling outpost needs polishing before it’s running smoothly.

The local, 100 percent Angus burgers—like the bacon, egg, and cheese option—are generously portioned and served on nicely griddled sesame seed buns. However, the presentation and accompaniments leave a lot to be desired, especially when a plate can run almost $11 (not counting the $1 up charge for a grass-fed patty). French fries are tough and greasy, ditto for sides such as the fried artichokes and jalapeños (pictured) that are bogged down with too much batter. Stick with the refreshing Asian coleslaw and you’ll go home happy.

Tip: Order a frosty liquid nitrogen shake, created by molecular gastronomist Ian Kleinman of the Inventing Room, to help sweeten the experience.
