Order This: Lucky Pie’s Summer Vegetable Spreads

At Lucky Pie Pizza‘s original location in Louisville, the appetizer is called the herbivore spreads. At the Denver outpost (in the former home of Dixons), it’s listed as the summer vegetable spreads. Either way, this is the same dish for the same price ($11) and it’s become my go-to lunch.

It’s quite simple, really. The kitchen whips up a selection of spreads—a garlicky hummus, an earthy beet purée, a slightly spicy corn cream, and a tangy romesco—and serves it with a pile of dressed arugula, roasted garlic, and grilled bread. I mix and match, layer the goods on thick, top with arugula, and try to decide which one is my favorite. It’s close, but I think the romesco (a traditional Spanish combination of roasted red pepper and almonds that has dozens of variations) wins out for the hint of sherry vinegar and the nutty base.

Tip: For a heartier snack (or if you’re splitting), add an order of the smoked house-made mozzarella.
