As if opening TAG Burger Bar in Congress Park, running TAG Restaurant and TAG Raw Bar downtown, and consulting on the Colorado Convention Center‘s menu wasn’t already a full-time job, chef Troy Guard has another project in the works. And this one is a two-parter.

This fall, on the corner of Broadway and Larimer, Guard will open a Mexican restaurant featuring his interpretation of the cuisine. Guard is adamant that this will not be a taco shop a la Pinche Taqueria. Instead expect tamales, burritos, and enchiladas (here’s hoping the goat enchilada he served at the Taste of the NFL charity event in New Orleans will land on the menu).

Next door, Guard will open a pastry shop in tandem with Noah French, TAG’s longtime pastry chef. With freshly baked breads, pastries, and a few light, savory items, Guard expects the casual spot to serve breakfast, lunch, and dinner. French will whip up the goodies (including an alleged world-class croissant) in an open kitchen.

Both spots are slated to open in October.
