Next time you stop by Jonesy’s EatBar, eschew the standard brew for a fruit-infused drinking vinegar. Yes, really. The tart and bold Thai-style digestifs are gaining traction in this country thanks to Pok Pok, Andy Ricker’s legendary restaurant in Portland, Oregon. (Indeed, Jonesy’s co-owners Leigh Jones and Margaret Moore were inspired by Pok Pok’s version.) Moore has been experimenting: She’s created strawberry, carrot, and honey vinegars that offer a zip of pure flavor with a mouth-puckering tang.
