On a recent trip to Boulder, I popped into Cured cheese shop at 19th and Pearl streets for lunch. While I ordered a sandwich called the Stephanie (a well conceived combination of honey-whipped goat’s cheese, prosciutto, and peppadew peppers), I couldn’t stop stealing bites of the grilled cheese that I’d chosen for my children.

With a generous portion of oozing fontina, sweet caramelized onion, earthy prosciutto cotto, and tangy Dijon mustard, the cheese shop’s most iconic sandwich is no trite choice. The ingredients come between two slices of buttered country bread that is crispy but still pleasantly chewy from just enough time between a cast iron press. What’s more, co-owner Will Frischkorn and his team rotate the ingredients for the grilled cheese sammie so on another day of the week customers might find it stacked with bacon jam and a blue cheddar from Wisconsin; or capicola, Gruyère, and Raclette; or speck, cheddar, and spiced tomato chutney.

The next time I’m near Cured at lunchtime, you can bet that I won’t be foolish enough to relegate the grilled cheese to a kid’s meal. Instead, I’ll proudly order the timeless classic for myself.
