If PMG Wine Bar sounds like a clunky name for a Boulder eatery, you’ll be interested to know the origin of the acronym. PMG stands for the French phrase “pour ma gueule,” which translates to “for my mouth,” and refers to wines so special that winemakers keep them for their own consumption.

The moniker perfectly suits owner Emily Gold’s jewel-box of a spot, which sits in the former Beehive location. The remodeled space, which opened Thursday, August 7, allows Gold’s thoughtful collection of primarily Old World wine to shine. Her extensive experience (she studied with the Court of Master Sommeliers, Frasca Food & Wine, and Volio Vino, and worked with a wine importer in Burgundy and Rome) is evident in the interesting selections that encourage experimentation.

To go along with the wines, chef Salvatore Proia (formerly of the Bitter Bar and Q’s) crafts a selection of small and large plates. The balanced dishes—prosciutto with house-made ricotta and shishito peppers; spot prawns with bottarga; tortellini with butter and sage (pictured); and dry-aged sirloin with salsa verde and potatoes—hold their own but never overshadow the wines.

Go, experience PMG, and I suspect you’ll leave uttering the phrase too.
