A meatloaf sandwich might seem like an odd choice when the weather has been downright summery. But I’ve been in cookbook mode (as in, let’s get this thing to press) and I needed meals with heft to sustain me through long days and nights. For one such lunch, I turned to Hutch & Spoon, a five-year-old restaurant that helped pioneer the RiNo neighborhood. (It made our Best New Restaurants list in 2009.) The nothing-fancy-about-it sandwich has been on the menu since chef-owner Tracy Zimmer opened the cafe. And the first-rate combination of sourdough, cheddar, and thickly sliced meatloaf is as simple and perfect as it’s ever been. No ketchup needed.
