At Blackbelly Market, Evelyn’s Famous Carrot Cake isn’t just any wedge of frosting-laden goodness; it’s a treat that honors the memory of a Boulder icon. A year ago, executive chef and owner Hosea Rosenberg’s friend Evelyn Dale, who was well-known around Boulder for her love of food, succumbed to cancer. When Rosenberg needed a carrot cake to round out his menu, he asked Dale’s husband, Richard Palmer-Smith—who had sought solace in the kitchen—to share his Evelyn-inspired recipe.
