I can never get enough of springtime in Colorado when the rising temps mean every place with a patio is working on a wait. One of the best new eateries to kick back in the sunshine is the bar and restaurant at Avery Brewing Company’s new Gunbarrel location. Here, craft beer and beautifully smoked meats come together in perfect harmony.

Avery’s $30 million facility opened last month in an area newly zoned to accommodate on-site restaurants at breweries, distilleries, and wineries. All 67,000 square feet of the state-of-the-art brewery looms in the background, dwarfing the somewhat cramped quarters of the dining room but allowing brewing space to meet the skyrocketing demand for Avery’s ever-expanding array of craft beers.

Although there is some tweaking to be done at the nascent eatery, there are plenty of must-order items. Of particular note is Chris Blackwood’s (formerly the chef of West End Tavern) prime rib dip with a mighty stack of house-smoked Meyer Natural Angus beef. Onions sautéed in Avery stout accompany the beef, along with punchy horseradish sauce and a plump brioche bun. Because the meat is so juicy, dipping in the jus is completely optional, but a side of pork belly Brussels and a pint of Oatmeal Porter (available only at the brewery) are not. Place your order and lean back on the sun-drenched patio and enjoy springtime heaven.
