If Cinco de Mayo has a drawback it’s that the bash is over too quickly. Much too quickly, says Pat McGaughran, founder of the Rio Grande Mexican Restaurant. “Every year we look forward to celebrating the start of summer with Cinco de Mayo, but we decided one day is just not enough.” So, this year McGaughran will launch Rio de Mayo to tease out the festivities for the duration of the month.
Starting tomorrow, Friday, May 1, the Rio will keep the party going with weekly beer and tequila specials and live outdoor music. Throughout the month, watch for the Wednesday concert series—acts include Ryan Flick, Babakuul, and Matt Mahern—on the Rio’s patios and rooftops.

As a companion piece, frozen blocks of ice containing Rio de Mayo coins will show up near the restaurants (hint: LoDo’s ice sculpture will appear in front of the restaurant’s newly expanded patio). The tokens—once extracted from the melting ice—are good for food and drink specials.
FYI: For a better chance of springtime weather, the Rio in Frisco will kick off its celebration on May 16 instead of May 1.
