What’s a picnic without a perfect sandwich? If you’re headed to Boulder to do some hiking (or shopping or sun basking), swing by the Organic Sandwich Company. Lunch here means meticulously sourced organic, local, and GMO-free ingredients.

Before opening a brick-and-mortar location earlier this year, founder Marcy Miller was slinging her tasty concoctions at the Boulder Farmer’s Market. Although you can still get your fix there (try the egg sandwich with truffled Neufchâtel), her shop is open seven days a week from 11 a.m. to 7 p.m. The kids’ menu, freshly baked cookies, and gluten-free and vegan options make the Organic Sandwich Company a one-stop-shop for the whole gang. Bonus: The location makes it ideal for picking up lunch before hitting the Flatirons.

The shop features six meat sandwiches (three of which come on a pretzel loaf), but the veg options are delicious enough to please even the most diehard carnivores. We’re big fans of the house-made bacon jam, giardiniera, almond feta, and aïolis, as well as the local products—Rowdy Mermaid Kombucha, Bhakti Chai, and Jackson’s Honest Chips—stocked on the shelves. The main selling point, however, is the pretzel loaves, which retain the structure and chewy density you crave in a sub roll, but pack more flavor and add a bit of salt to every bite.

Tip: Check the chalkboard for the rotating sandwich of the week. When we visited it was an oven-baked falafel sandwich, with Israeli salad, crisp romaine, and tzatziki on a pretzel loaf.
