Find Texas-Style Barbecue at Wayne’s Smoke Shack

Line out the door every day? Check. Open only until sell-out? That’s right. Quirky location? You got it. Barbecue lovers: Make the pilgrimage to Wayne’s Smoke Shack in Superior where fall-off-the-fork beef with thick, crispy bark is the main attraction. Add to that a line-up of equally delicious slow-smoked chicken, pork, catfish, and salmon, and you have all of the critical elements for a great barbecue meal.

Texas-native Wayne Shelnutt’s low-and-slow approach has garnered many a barbecue fan since he opened in a Superior strip mall two years ago. And those in the know arrive early (the eatery opens at 11 a.m. Tuesday through Saturday) because when the meat runs out, Shelnutt closes the doors.

Though it’s hard to choose a favorite, the brisket (pictured), gets top nods for 24 and 28 hours in the smoker. The meat is so flavorful that sauce is truly optional. St. Louis-Style ribs, smoked pork shoulder, and occasionally smoked pork belly also shine, as do the quartered chickens. Sides, however, are not particularly noteworthy—the exception being the freshly made barbecue beans and the homemade pickles. Wash it all down Texas-style with a cold bottle of Big Red soda.
