Pizzeria Locale Denver‘s Hawaiian pizza, which started off as a limited-time get, has made its way onto the permanent menu. This is significant because the pie doesn’t adhere to PL’s usual standards: mainly that a combination have Italian roots. But when the combo—mozzarella, ham, and pineapple—was offered as part of the eatery’s Guest Chef Pizza series in October, the pie quickly found a fan base. So much so that culinary director Jordan Wallace determined the pizza needed to stay.

Of course, by now, you’ve likely guessed that this isn’t a typical canned pineapple–Canadian bacon getup. Not in the least. The pineapple is fresh, and slightly charred to bring out the sweetness; the ham is prosciutto cotto; the cheese is smoked mozzarella; and the jalapeños add zip. (Note: This is a change from the original combo, which included Taylor Ham and was a collaboration between Wallace and New Jersey–native Josh Pollack, who owns Rosenberg’s Bagels & Delicatessen).

In addition, two more pizzas have also landed in the lineup: the Caprese with mozzarella, chicken, grape tomatoes, basil, and garlic oil; and the four cheese with mozzarella, smoked mozzarella, Gorgonzola, Parmesan, and garlic oil. All, according to the PL crew, are selling well.
