Make It: The Ritz-Carlton’s Lavender-Cucumber Spritz

Summer is flying by. Stop for a moment and make it last with this wildflower-inspired cocktail.

Each summer, wildflowers cover the Rocky Mountains with a carpet of vibrant pink, yellow, violet, and white blooms. But thanks to the recently implemented Summer Wildflower Program at the Ritz-Carlton Bachelor Gulch in Beaver Creek, Colorado’s wildflowers add more to the guest experience than a beautiful view. Over the last couple of months the luxury hotel has incorporated flavors inspired by the blossoms into flower-focused cocktails.

The beverage lineup includes a lavender-cucumber spritz made with Woody Creek Distillers gin and lavender grown at the hotel; a Rhubarb Bellini with elderflower syrup; and the Blossoming Bouquet, which employs orange blossom water. While these tipples do not include the actual wildflowers surrounding the resort (that would violate protective laws set by the state of Colorado), they capture the summery spirit of the flowers in full bloom.

Can’t make it up to Bachelor Gulch this summer? The assistant director of food and beverage at the Ritz, Nicole Lausmann, shared the recipe for the lavender-cucumber spritz.

Lavender-Cucumber Spritz

½ ounce lavender syrup (recipe below)

¼ ounce lemon juice

1 cucumber slice, plus extra for garnish

1 ½ ounces Woody Creek Distillers gin

2 ounces soda water

Muddle cucumber with lemon juice and lavender syrup. Add the gin and strain into Collins glass over fresh ice. Top with soda water and garnish with a fresh cucumber slice.

For the lavender syrup:

1 cup white sugar

1 cup water

1 tablespoon lavender petals

Place sugar and water in a small saucepot and bring to boil. Add dried lavender and boil for 10 minutes, then strain petals and cool before using. Makes enough for 16 cocktails.
