Chef Aniedra Nichols To Run Silva’s Fish Market

Look for more changes to come to the Denver Central Market eatery this fall.

Change is in the air at Denver Central Market: Aniedra Nichols has been named chef/owner of Silva’s Fish Market, the ultrafresh seafood purveyor opposite the main entrance. “I’m very excited. It’s a big deal, a scary deal,” says Nichols of taking on an ownership role.

She comes to Silva’s from nine-month-old Fish N Beer (read our review from the July issue), where she was the chef and managing partner. “We were just not on the same page as far as menu development,” she says of the move. Prior to that, Nichols spent almost a decade at Elway’s Cherry Creek and worked front-of-house at Bistro Vendôme in Larimer Square.

Silva’s offerings are staying the same—for now. But in mid-October, the restaurant will get a new name and a new menu. Additional cooking equipment, including a grill, flat top, and fryer, will allow Nichols to add hot food items, and possibly a few non-fish options, too. Staples such as the poke and tuna salad sandwich—Nichols’ favorite order—will likely stay put. Says Nichols: “I’m into simple ingredients. I want it to be approachable. Very seasonal. Very fresh.”
