Two beloved Jewish bakeries—Rosenberg’s and the Bagel Store—become one on September 15.

Just in time for Rosh Hashanah (the Jewish New Year), two of the city’s most beloved Jewish bakeries are joining forces: On September 15, Rosenberg’s Bagels & Delicatessen will merge with the longstanding the Bagel Store to form Rosenberg’s Kosher, the state’s largest purveyor of Kosher food. In Yiddish, one might refer to the union as “beshert,” or meant to be.

“It’s an honor to be able to serve the Jewish community in its entirety,” says Rosenberg’s owner Joshua Pollack of opening a kosher location of his überpopular bagel shop. “Bagels are for everybody.”

Fans of 41-year-old the Bagel Store—where Rosenberg’s Kosher will be located—will continue to find familiar treats such  as rye bread, babka, rugelach, and challah. But Pollack is giving the front retail area a facelift and adding a dairy room and a kosher smokehouse, so people can also pick up Rosenberg’s smoked fish and house-made cream cheeses. No sandwiches will be sold, but you can buy all the elements, grab a seat on the new outdoor patio (which is still in the works), and build your own. Pollack is converting everything over to Rosenberg’s recipes, except for the challah. “I don’t have a better [kosher] recipe,” he says.

Pollack will also be taking over the Bagel Store’s wholesale and catering endeavors and expects to churn out more than one million bagels a year for venues such as Whole Foods Market and the Colorado Convention Center. Kosher catering will continue to be available for weddings, bar and bat mitzvahs, and more.

Note: The Bagel Store is currently closed for renovations. It will reopen as Rosenberg’s Kosher on September 15; the revamped shop will be open seven days a week.
