Jai Ho, the Indian kitchen that rocked Denver’s eastern suburbs, is spreading the love to Boulder with its quirky yet mouthwatering blend of pan-Indian cuisine. The restaurant’s hysterically written, mile-long menu blends a heavy dose of Southern curries, dosas, and street foods with a dash of Northern Indian flavor and a pinch of Indo-Chinese.

Sathya and Sujatha Narayan, Jai Ho’s congenial co-owners, come from the world of architecture and real estate but describe themselves as “serious travelers and foodies who knew how to fill an empty niche in Denver’s food scene.” And fill it they did, with fiery dishes like the Indo-Chinese chile gobi (fried cauliflower laced with spices, chiles, peppers, and onions); rich coconuty curries like the Malabar chicken from the Kerala region; and vegetable dum biryani from the north, laden with roasted green chiles and curried veggies.

Jai Ho Boulder features the same robust roster, but the couple has been playing with heat levels. Despite fluctuations, the cozy new dining room is packed nightly with happy Indian connoisseurs.

Best Bet: Opt for dinner, rather than the lunch buffet, for veggies and rice dishes at their finest.
