With Jax Fish House, Cuba Cuba Sandwicheria, Udi’s Cafe Pizza and Bar, and Big Smoke Burger open and operating at City Set, the new Glendale development is already proving to be a bustling center of restaurant commerce. And it’s about to get even better. Kimbal Musk, co-founder of the Kitchen and its offshoots [Upstairs] and [Next Door], has signed a lease for the Kitchen [Next Door] to go in a couple doors down from Jax. The space will include a large patio on the second floor.

The concept—the flagship of which is in Boulder—will remain the same: an affordable community pub with a farm-to-table inspired menu. Although “locally sourced” has become a catch phrase for many chefs and restaurateurs, Musk strictly adheres to the philosophy. So much so that the addition of [Next Door] locations (the pub is also opening in Union Station in 2014) has created a sourcing challenge. “Where do we get our beef from?” Musk says. “How do we create a supply system [of local, natural, and organic] and do it to scale?”

Aside from the expansion, what’s perhaps most interesting about the City Set location is that it will be the first Kitchen concept outside of a true downtown environment. “Where most people walk to our restaurants, this is a driving location,” Musk says. “It’s also the first time we’ve worked in a new structure where we’ll have to create character.”

Look for the Kitchen [Next Door] to open by the end of the year.

More news: On Friday, Musk also announced that the Kitchen will open in Fort Collins at 100 N. College Ave. The opening is slated for March 16, 2014—the date of the Kitchen’s 10th anniverary.
