Ever since Hosea Rosenberg won season five of Top Chef in 2009, Colorado has been waiting for the chef to make his big move. Rosenberg took his time; he started a food truck and a catering company, and then, this past November, he opened Blackbelly Market in east Boulder. With in-house butchery and charcuterie programs and a daytime market, this is a longtime dream come true for Rosenberg.
