Allison Espresso Pastry Boutique will serve organic and fair-trade coffee from Breckenridge's Conscious Coffee. Look for monthly seminars—complete with cuppings—so patrons can learn more about the coffee they're drinking. Owner Allison Koontz, a trained pastry chef who used to work for Blue Fine Pastry, will whip up the day's baked goods. "We'll follow seasonality so when we open we'll have muffins, scones, and tarts made with fresh peaches, blueberries, and strawberries from the farmers' markets. In fall, those flavors will give way to pumpkin spice, cinnamon apple, and banana walnut."
