For a special multicourse dinner, chef Michael Long turns out plates of prime dry-aged beef with a cheddar crepe and Hawaiian tuna with Westerfield wasabi chevre, while Jackie Rebideau of Centennial's Fromage to Yours cheese shop explains the nuances of the cheeses' flavors.
