New Discovery: Indulge Wine Bar

Who says we're in a recession? Since opening a month ago, Indulge Wine Bar in Highlands Ranch has been packed with wine lovers and neighbors in need of a night out. They flock to the gorgeous space--decorated with burgundy reds, dark woods, a stunning glassed-in wine cellar, and a whimsical string of glass bubbles--to sip vino and order tapas and desserts. The waitstaff will recommend the Asian nachos with shredded pork, hoisin peanut drizzle, and green onion pesto, but I recommend skipping the overambitious dish in favor of the flatbread pizza with fig spread, mozzarella, and prosciutto. The flavors are simple, classic, and at ease with your wine (especially the earthy Solar de Randez Rioja). Even if some of the small plates are a stretch (the sweet potato napoleon with corn-infused mascarpone, for example), I like the wine bar for what it's not: This isn't a snooty spot. Instead, Indulge encourages diners to explore with suggested pairings, an adept waitstaff, and the option of 30 wines by the glass or half-glass.
