Drink: Bubbly for New Year's

Popping the cork for New Year's is a ritual as sacred as pumpkin pie on Thanksgiving, but shopping for bubbly is nowhere as easy as picking up cans of pumpkin puree. Champagne's high price tag and confusing origin issues make it less approachable, but it doesn't need to be. This quick primer on the sparkling wine unveils its complexities, and Pam Glynn, co-owner of Riverfront North's Corks the Wine Store, recommends not only Champagne but other bubbly for the celebration. Her picks include the French Toad Hollow Risqué ($15) a sweet, festive demi-sec and Mionetto Prosecco Brut ($12) for its dry, slightly fruity flavor. If you're keen on true Champagne, Glynn suggests the elegant dry Heidsieck and Company Blue Top Brut ($40). Just remember, no matter which wine you choose, twist off the cork when it's very cold or your cork (and bubbly) may hit the ceiling upon opening.

Great suggestions. Please, please put a cloth towel or napkin on top of the bottle before you remove the cage. After you've seen someone get a cork in the eye, you'll recognize the wisdom of this. Under the cloth, hold the cork and twist the bottle from the base to ease the cork out. Cheers.
