Elegant Appetizer: High Desert Foods' Confitures and Cheese

Many of us have an abundance of jams, jellies, preserves, and conserves---some sweet, some savory---lining the shelves of our fridges and pantries. But, here's a new one to add: High Desert Foods' organic fruit confitures, which are similar to preserves but with as little added sugar as possible. High Desert makes theirs in small, hand-crafted batches with thick pieces of fruit. The offerings, which include hard-to-resist combos like Strawberry-Chardonnay, Peach-Pecan, and Apricot-Amaretto, are as interesting on pancakes as they are on roast pork. But the confitures are at their elegant best when paired with cheese. Try the Rhubarb-Rose with Vanilla combined with soft, tangy Chevre d'Or; the Apricot-Lavender with the rich, slightly salty Vermont Shepherd raw sheep's milk cheese; and the Spiced Peach with the buttery, Italian cow's milk Rebruchon val Susa. (All are available at The Truffle Cheese Shop.) High Desert Foods, 1-866-248-6584 The Truffle Cheese Shop, 2906 E. Sixth Ave., 303-322-7363
