As tiny as it is, I sometimes forget about The Cheese Company in Hilltop. But this specialty shop, located next to Locanda Del Borgo on the corner of Holly Street and East Third Avenue, is worth remembering.

The sandwiches (don’t miss the #1, with turkey, provolone, pesto mayo, red peppers, and cucumber), cut-to-order cheeses and charcuterie, and shelves stocked with Colorado-made goodies, make it a place that’s as good for picking up lunch as it is for grabbing a last-minute hostess gift.

My latest fixation is the store’s house-marinated feta. Owner Rich Priest infuses olive oil with fresh herbs, red peppers, and mandoline-thin strips of cucumber before adding blocks of French-made feta to the mix. Request a hunk of the creamy cheese and serve it with Nita Crisp crackers and olives, or break it into a salad.
