Dig Into Toast's Eggs Benedict

When ordering brunch, I tend to stick with the classics---and more often than not that means eggs Benedict. The combination of Canadian bacon, poached egg, and hollandaise never ceases to satisfy. But recently, I've taken to mixing things up the slightest bit. Toast Fine Food & Coffee, a breakfast and lunch spot in Cherry Creek and Littleton, trades the Canadian bacon for grilled prosciutto. After one bite, I was hooked on the ham’s soft, buttery texture, which melds perfectly with yolky eggs and silky hollandaise. I’ve yet to try Toast’s other Benedict varieties, like the crab-cake version or the Garden Benedict, with a mix of vegetables, but given my recent discovery, I’m likely to give them a shot sometime soon. 222 Columbine St., 303-322-3493, 2700 W.
