Part of the charm of dining at Twelve Restaurant is knowing the modern-American menu changes monthly. (In other words, April’s braised rabbit with baby carrot and English pea ravioli is only on the menu for 21 more days.)

That said, chef-owner Jeff Osaka points out that one dish has been on the menu since day one: the green salad. This refreshing starter is an easy contender for the best salad in Denver. And it succeeds because of its simplicity: baby greens, shaved fennel, carrots, watermelon radish, shallots, fine herbs (parsley, chervil, and chives), shaved Parmesan, and a judicious toss of clean-tasting Banyuls vinaigrette.

Osaka says he eats the dish nearly every day. And given the chance, I would too.
