No wonder the lines are out the door at Pica's Mexican Taqueria in east Boulder. It seems few can resist the succulent pork adobado burrito: slow-cooked meat stuffed inside a homemade tortilla, slathered in smoky adobado sauce, drizzled with sour cream, and served with garden-fresh salsa. Add to that an entire roster of well-edited dishes, such as charbroiled chicken enchiladas, delicate Baja-style mahi tacos, earthy chicken posole, and beefy carne asada quesadillas.
