Street Food: StrEat Chefs

If you spend much time in Boulder, you may have already spotted StrEat Chefs, the gourmet food truck that's the brainchild of entrepreneur Laura Rice and Top Chef season five winner Hosea Rosenberg.

Inspired by Rosenberg's world travels following his Top Chef gig, StrEat Chefs' ever-changing menu captures the essence of Asia, Mexico, and the Unites States in every soulful bite.

If you see the 23-foot Flying Cloud Airstream trailer, which is nicknamed "Rosie," stop for the global eats. Menu staples include spot-on banh mi sandwiches packed with fresh mint, juicy grilled chicken or pork loin, and crispy julienned vegetables on a chewy baguette; earthy Mexican corn soup sweetened with a corn-cob stock and deepened with a dollop of fresh guacamole; and all-American pulled-pork sandwiches gussied up with crispy dill pickles, a drizzle of honey-chipotle barbecue sauce, and a side of slightly spicy Creole slaw.

StrEat Chefs' success already has Rice and Rosenberg looking to expand to possible markets in Austin, Texas; Portland, Oregon; Madison, Wisconsin; and Lawrence, Kansas.
